 There are numerous smoke cooking woods to use each having distinctive smoke flavoring characteristics. We offer hard to find and unusual  woods that are as organic as any available.

Much has been written about this subject, but keep in mind, wood used in smoking is so variable that you really need to determine which of the different varieties or a combination of different types of smoking  wood you might use to find the best for each food type you are BBQ’ing (meat, fish or veggies, etc.).

Black Jack ( or Black Jack Oak)




Black Jack is a southern variety of “oak”,  not nearly as hard as the northern varieties such as white or red oak which are typically used in furniture making and as a fuel for a fireplace. Although many types of oak, including red and white oak are used for smoking applications. Black Jack trees typically top out at about 30′ tall. They are great for smoking almost any type of food. Orange Wood

We all know about oranges, but the wood is another story with a mild smoke flavor characteristic and is used for smoking lighter meats and poultry, but can also be used to tone down stronger flavored woods such as mesquite or walnut. Also, many of the other citrus woods are similar, but not exactly the same and can be combined together when smoking turkey, duck, chicken or pork. Keep in mind that there are many varieties of orange trees: Blood Orange, Naval Orange, Valencia Orange. The most common orange wood will be taken from Valencia Orange trees. Grapefruit Tree wood




Many people selling wood for smoking claim that all of the citrus woods are similar, but this is illogical. The fruits of the tree and even the leave will have a difference taste and certainly the leaves have a different aroma when they are crushed. Grapefruit wood when used  for pork, has a flavor starts out similar to apple, although a bit softer, and then has a pleasant tangy, almost sour finish.  the flavor is probably much better suited to pork than it is to beef and should be wonderful with fish too. Tangerine Tree Wood




The tangerine is a variety of the Mandarin orange. Tangerines are smaller than oranges and have skin that is easier to peel. They are believed to have originated in China. They have been cultivated in China and Japan for over 3,000 years. Their name derives from the place from where they were first shipped to Europe – Tangier, Morocco. Tangerines arrived in Europe in the early 19th century and North America by the middle of the century. Florida is the top producer of tangerines in the United States. The smoke from a tangerine is similar to that of orange, but remember, not that similar.Try using tangerine wood for fish, poultry and pork. Water Hickory (Carya aquatica)- This type of hickory is also called bitter pecan or swamp hickory.  It is best known for its use in smoking meats, such as ham and bacon, whose rich, hickory-smoked flavor are a southern tradition. Water hickory trees regenerate aggressively in swamps and wetlands. Several wildlife species consume the fruits of water hickory trees, including wild hogs, wood ducks and squirrels, who depend heavily on the nuts in their diets. The trees also provide refuge for numerous smaller animals and birds. A Southern Pecan tree is a large, vase-shaped tree with deciduous feather-like compound leaves. Under ideal growing conditions, a pecan tree can get 180′ tall and have a trunk 7 ft (2.1 m) in diameter. The pecan tree has gray bark that becomes reddish brown with age. The wood of this ideal tree is ideal for smoking both meat and vegetables. Southern Wild Cherry Tree Wood

Black cherry (Prunus Serotina) is a native North American fruit tree native to areas of Florida north of Lake Okeechobee. The black cherry can reach 60 to 90 feet in height, and has low branches that droop to the ground. Again, this is another terrific smoke cooking wood for fish, meat or fowl. Black Cherry is excellent for pork smoking.
